Your rolls & buns,- what is their consistence? Soft on the outside or crispy, sweeter or more to the salty/ neutral taste. The real German rolls are difficult to do here in China. I'm not so sure if that might be the water I use or the flour or dry yeast. But they don't really go up as I like them to be. Neither are the developing a crispy crust on the outside. Some could be used for basketball games.
Twentyfive percent out of nothing is still nothing!

Easy is just another word

I think seneca said it for me, so I will just sit and try it after you make it. Don't forget to put a little butter or olive oil on top of the bread while cooking, please.

Do you do a "water bath" when baking? This should give you a nice crisp crust on the outside with a soft center. If you do not know how to do this, there are plenty of examples (some with pictures) on the Internet.

I have a bread making machine ( imported from the UK ), throw the ingredients in, set the time, turn it on and wake up to the wonderful smell of new bread, easy.
