sure, some difference is needed.

but "unification of taste" sometimes goes too deep...

Uhm, maybe it's availability of ingridents etc.
The Chef of Polish restaurant on Expo Pavillon told me everything but the tissues bought at shanghai metro store was directly imported by themselves from Europe.
Too expensive for a purely commercial restaurant.

Know two somewhat decent german restaurants in nanjing, lionstar.
And a german bakery and butcher.

"Uhm, maybe it's availability of ingridents etc." hm... I made potato cakes, and it was the same as in Poland
fried potatoes too... no difference

and You know what? it was cooked all the way in, no "raw core" ;)

and there is no problem to put into menu 2 sections:
- classic European dishes (more expensive, because made with for exemple imported spices)
- fusion dishes (European dishes converted to fit Chinese taste, also with use of all Chinese ingredients)

yesterday I fried some pancakes on the beer
and Tsingtao makes no big difference, it tasted the same like back home on cheap light beer

btw. ingredients here are really good, and many of them - similar to European

Polish food industry imports a lot from China
and the spices (most important) are not THAT expensive (comparing to amount used in the dish), even if it would be bought in some supermarket here

we are talking about prices in restaurant, not a cheap bar ;)

Maybe it's the not giving a rats arse about it.
Like the "turkish" restaurants in china e.g. Cafe Istanbul in Nanjing.
A meeting place for turkish expats to gather and then go somewhere else to eat.
Or with the raw, being unable to cope with a big event as that.

I once had cordon bleu, or chicken cordon bleu,
and the cook tried to give some lame excuses for having given me that not fully well done.

btw,in china, not only foreigner complain about foreign dishes but also chinese complain of chinese dishes, especially if they order "local-home-dishes" in other places; sichuan-people are well known for that......if i, as a bavarian, order white-saussages in remote east germany and it´s not to my taste it was my fault...probably....
