nitrates & nitrites replaced saltpeter, which was used traditionally for centuries of meat curing & preservation throughout the world, but which is shown to probably have been even more carcinogenic than our current salts..

without such things as salt-peter and nitrates / nitrites, sausage making was near impossible, and would normally lead to death by botulism toxin

traditional hams like prosciutto are also not possible without salt-peter or our other curing salts

before such things were used, meats were always fully dried, either by sun or straight salt-curing..

straight salt curing leads to much harder meats.. nearly inedible unless first boiled or steamed to soften them..

there are certain areas of the world where the natural salt harvested contained sufficient amounts of other types of curing salts that curing as we know it today was successful long before salt-peter was discovered, but only in certain climates, and in certain conditions, in very specific environments, with certain winds and certain humidity, and only with a certain salt harvested from a certain area, and then only sccessful at certain times of year

Except they're not Kosher...

of course they are Kosher

in the old days, it was only kosher it was from the rear half of the animal, as the front half was for use in temple rituals

today, "Kosher Certified" means "made in accordance with Kosher guidelines", which have more to do with breaking laws of other types, rather than for use in the temples

i dont know how the white ones are processed

veal isnt white.

probably a frightening process best kept from the public
