The United States team obviously has more individual talent but they choked and that was that.

Tough luck for team USA if they're overweight and look much older. Anybody who knows East Asia also knows that even 21 or 22 years old girls often look like 15 or even sometimes younger.

Must Be Why

That is why strong regulations are helpful.  China has one of the strongest in the field - ALL coaches for athletic programs training for the Olympics are required to sign contracts to do their best to protect all trainees from injury.   That is actually very hard in certain disciplines, such as weightlifting and gymnastics, but the entire system tries their best to protect the young athletes.
