If you want to talk about CHINESE FOOD ONLY, you should go check out the "Culture" section. I will be moving stray Chinese food posts to that area, where they better fit the section title. But since this section is partly for getting to know people from all over the world, you can post some recipes here, especially from countries besides China, in order to help us get to know one another's cultures.

Please don't get into discussion, go to the FOOD thread for chit-chat, otherwise the recipes will be lost among conversation. I will delete posts that are not PURELY how to cook something.

Post recipes only, as if this is a Chinadaily Cookbook.

Thank you!

Aloo Roti - INDIAN potato cakes (flatbreads)

"I think these sound terrific from the wonderful book Favorite Indian Food by Diane Seed.
This homely bread is simple to make, and served with a bowl of soup it makes a satisfying lunch or supper.

    * 4 large potatoes
    * 1 1/4 cups whole wheat flour
    * 1 tsp salt
    * 3 fresh hot green chile peppers
    * 3 Tbsp chopped fresh coriander leaves
    * 3 Tbsp butter
    * vegetable oil for frying

Boil the potatoes in their skins, drain well and peel.
Work in a food processor with the flour, salt, seeded and chopped chile peppers, coriander and melted butter to make a soft dough.
Be careful not to over-process to the point of the dough becoming a paste that sticks to the processor bowl.

Leave in a warm place for about half an hour.
Divide into six portions and roll out each to form a disc about 6 inches in diameter.
These breads can either be cooked on an oiled heavy griddle or lightly fried until each side is nicely brown.
Makes 6."

My BBQ sauce for grilled chicken or pork

(from Mikeghet)

1/4-.5 cups of ketchup (or tomato sauce)
.5 spoons of crushed red chili pepper seeds
.5 spoons of paprika powder
.5 spoons of garlic powder
.25 spoons of onion powder
small pinch of cayenne pepper
1-2 spoons of worcestershire sauce (makes it a bit bolder flavor)
pinch of salt
2 spoons of brown sugar (can be ommtied but makes it thicker and sweet)
2 spoons of white vinegar (apple cider vinegar is gross substitute..use more vinigar to make thinner sauce)
Mix well and heat on high for 2-3 minutes in sauce pan.  After it's thickened a bit, let cool to room temperature.  Chives  can also be added or small amount of liquid smoke.

~~~~~~~~~~~~~~~~~~~~~~
for BBQ chicekn:
boneless chicken thighs (i use skinless as well)
sprinkle paprika, salt, black pepper and a little garlic powder
throw on high heat grill until meat is seared, turn to medium heat to let cook throughly; when 5 minutes left till meat is finished, baste meat with BBQ sauce and allow each side with sauce to cook for a couple minutes on high heat.
Remember, sugar burns easily, SO DON'T LEAVE THE CHICKEN UNATTENDED... ;-)
Make ice
you get the water and then put it in the freezer and then after a few hours you have ice...unless you dont plug in your freezer then you have water!!!
7 hour roast lamb!
Find yourself a large piece of lamb shanks (i think thats how to say it in English) and then put them in the bottom of a crock pot.  cover with white wine, garlic, onions, rosemary and sprigs of bazil!  Put in 3 cups of water and then roast for around 6 to 7 hours on 110 degrees celcius if your crockpot can go that low!
The meat should almost fall apart when you take it out of the crock pot.  SIMPLY AMAZING
