A meeting is any gathering for any purpose.

A conference is a gathering of people to confer--to discuss.

A seminar is a gathering that is away from the routine.  Special speakers, a special location, and so on.  Some religious students are called "seminarians" when they recluse themselves.

A symposium is a gathering that poses a certain question to the attendees.  Frequently it's announced as a "symposium on" this or that.

conference call

You will always hear people say CONFERENCE CALL which means a  conversation or conversations by more than 3 persons on the phone.
