I like one proverb that refers to the idea that a good cook only needs one knife (a Chinese cleaver); the proverb is the equivalent of "Jack of all trades, master of none."

"He has many knives but none of them is sharp."

Black cat or white cat is not important as long as it can catch the mice!

it is a saying often quoted by teachers of Chinese Economy..... It is not necessary for all production decisions to be in the hands of the state.... State or Market, so long as it works, it is OK!

My favourite two both involve a bit of travel..

The longest journey starts with the shortest step  (or with one step)

We cross a river by feeling for the stones*

bu guan hei mao bai mao

it doesn't matter if it's a black cat or a white cat;

zhua laoshu jiu hao mao

If it catches the mouse then it's a good cat.

mao = cat
laoshu = mouse
the rest hopefully you can figure out, sentence structure is similar to english.

My favourite is a silly one that is not technically true but I do enjoy it.

饭后一支烟,赛过活神仙
fan hou yi zhi yan, sai guo huo shen xian

have a smoke after every meal and you will live longer than the gods.

Which is of course, not true but represents that joyous feeling of a post dinner cigarette.
