1. There are no "harmfull gases" produced during baking (it is CO2).
2. Even CO2 production ends in  ...

Sounds reasonable.... coincides my opinion!
So the absurd saying must take the baked dough as freshly baked bread...
One thing that's truly hard to eradicate is the idea.

Only harmfull is factory made bread ! Due to chemicals they use in the production.
So best is to stick to home made bread

So best is to s ...

yup,

...but if the factory made bread is harmfull because of the chemical add-ons - it is not the case of "hot or not" and... it is almost impossible to buy "factory made" bread while still hot after the baking.

And to be fair - not every "factory made  bread" have to have harmfull chemicals in it, and sometimes even in the small bakery there are the same "chemical boosters" added. Currently it is quite impossible to buy a bread completelly without it, while not everyone can (and want) to bake bread at home, even in the "automatic baking machines".

It is like cooking - better to do it by yourself, but not everyone want it that way.
We live in the "rush world" and for some of us - every second is so "valuable" that there is no spare time for a healthy living.

I DIY my bread usually in Sunday afternoon. It cost time but not complex, the most hardworking process is turn the flour into a pile of dough; it needs more than an hour to press, squeeze, pull, push, drag, enlarge, shrink... just massage the dough to make its texture plastic enough. That's bored and repeatitious, but very natural and healthy, I like the moment when the shaped bread baked successfully in the oven.
