When I was in China, I was told to always "wash" real chinese tea, by pouring hot water over it before first steep. Also, I was told that non-chinese steep tea for way too long a time. One to two minutes is maximum depending on type of tea, green or black. They also said, as sundayrun, that pu'er is very good for health. I did have the best tea I have ever had when in china, enjoying green, oolong, and pu'er the most. I understand that green tea has an appetite supressant.
