The comparison with food cultures between China& the west

 China has a history of more than five thousand years, forming a splendid rich and profound food culture. And because of the west’s unique geographic position and cultural environment, a special food culture then has taken shape. Chinese people pay attention to the harmony between man and nature, westerners focus on people-oriented. There are many differences between China and the west, next, I will expound these differences and make the comparison in several aspects.

(一)Differences in diet concept and habit

  Chinese attach great importance to "eat", "hunger breeds discontentment" this proverb see that “eat” is as important as the god. In Chinese cooking, the pursuit of delicious almost reached the acme. The shape and color of dishes are external things, while taste is internal things, Chinese cooking pay attention to the interior and not deliberately modified appearance. In terms of Chinese food, it is popularly recognized that Chinese cuisine is world-famous for its perfect combination of color, aroma, taste and appearance. Contrast pay attention to "taste" of the Chinese diet, the west is a rational diet concept. Regardless of the color of the food, incense, taste, shape, and nutrition must be guaranteed, the west pay attention to how much calories a day, vitamins, protein, etc. Western restaurants do not pay attention to elaboration, they prefer the pursuit of fast and convenient, not luxury but more popular.

Since Chinese local dishes have their own characteristics, generally, Chinese food can be roughly divided into eight regional cuisines, which has been widely accepted around. But, the cuisine in the west is a little bit monotonous. Western-style food cooking condiment mostly different from Chinese food, such as sour cream, cinnamon leaf, lemon etc are common spices. The taste of various raw materials separate and reconcile, each seasoning has its own taste, simple and clear.

For this part, we can see that Chinese diet emphasizes sensibility and artistry, pursuing the taste of food, moreover, western diet concept is a rational, scientific diet, they lay emphasis on nutrition and rarely or almost no link between diet and spiritual enjoyment, in some way it fully demonstrated the spirit of freedom and independence of the west.

(二)Differences in three meals a day

  In China, there is a proverb in folk: have breakfast as a emperor, have lunch as a civilian, have dinner as a pauper. Chinese breakfast is the staple food in general and people may eat Steamed Buns, bean bag, Rice porridge, and also appropriate to add some protein rich foods, such as Soybean Milk, egg, with some pickles. Lunch staple food is mainly rice, pasta products. The type of food is very extensive, such as: meat, eggs, milk, poultry, seafood, vegetables, bean products, etc. The principle word of lunch is “full”. The dinner meals is the most ceremonious and sumptuous among the three meals, everyone cook very rich. Dinner time is a time for family reunion. Although we should eat less at dinner, family always eat more at dinner. But Chinese don’t have the habit of eating night snake, and the day is to follow the habit of three meals a day.

  By contrast, westerners breakfast is mainly concluded bread, milk, eggs, fruit juice, oatmeal, coffee, sausage, etc. They often have lunch in the workplace with fast food, usually sandwiches, fruit, coffee, hamburgers, hot dogs, etc. At14:00-15:00, they may have a short break and have a afternoon tea. A cup of coffee and a piece of cake or sandwich are usually served. Dinner is a dinner, a relatively rich, such as steak, Pork Chop, barbecue, fried chicken, with bread and butter, vegetables, fruits, snacks etc.. They are in the habit of eating snacks before bedtime, adult often eat fruit, candy and children eat milk and cookies. During weekends or holidays, many families only eat two meals. They combine breakfast with lunch as a “brunch”.

(三)Differences in dietetic style

  Chinese and Western diet are very different, this difference also affects the national character. In China in any banquet, no matter what purpose, it will only have a form that is we sit round and round, sharing a seat. In banquet, there is always served the  round tables, which form a form of unity, courtesy, fun atmosphere. Delicious food is placed in the center of a table, it is not only a table to enjoy, taste the object, but also a table of people exchange of emotional media. People toast each other for food, urge the vegetable, in front of the good things, reflects the mutual respect between people and the virtues of comity. It totally conforms to our national "happy reunion" universal mentality.

  But in western banquets, although food and wine are very important, in fact they are as foils. Friendship is the core of the party, with the guests sitting next to the conversation and to achieve the purpose of friendship. The difference with the Chinese diet is more obvious is the western popular buffet. We do not have a fixed place in each one takes what he needs, eating, walking free, in this way to facilitate the exchange of emotion between individuals, not all words on the table, but also showed respect for individuality, for westerners. By the influence of individualism thought, westerners eating habit is a person order his own meal and they do not have to consider other people's tastes and preferences, pay also take AA system, each pay for each account.

(四)Differences in dietary structure

  From the diet structure, Chinese people eat more vegetables every day than westerners, while westerners eat a lot of protein every day, but their gastrointestinal function was affected by eating too little cellulose; Chinese like whole grains, while westerners prefer fine white powder white. In fact, coarse grains contain more nutrients than refined grains; Chinese people love to eat vegetable oil, while westerners prefer to use high cholesterol containing animal oil, in addition to a large number of daily butter. Chinese urban and rural residents are fond of soy bean curd, bean curd, bean sprouts and other bean products, but westerns always stay at a respectful distance from those coarse food grains; Chinese especially in Guangzhou and the Pearl River Delta area residents love fresh pork liver, intestines, lungs and other animal offal, however westerners do not have this hobby; Steamed food has more nutrients and less damage. westerners like steamed food, and China prefer stir.

  Westerners have been aware of being called "red meat" beef, meat and mutton is one of the leading cause of colon cancer and prostate cancer, they also realized that one of the reason of causing pathogenic factors of fat and prostate cancer and heart disease are the red meat too. They notice to eat red meat once a week. Many newspapers and magazines in China have reported red meat problems many times, but the Chinese people have not paid enough attention to it. Chinese also regard the “plenty of meat and fish ” as the really big meal.

(五)Differences in the dish names

  A lot of dishes in China often contains a lot of historical and cultural information. Such as "Dongpo's braised pork", according to legend it was named and cooked by the Song Dynasty writer SuDong po. "Kung Pao Chicken", "Kung Pao" is the official position in the ancient. Some names also have a great relationship with allusions and legends, such as "Farewell to My Concubine"."Sea food and poultry" is a legend of this dish is attracted to the smell of the monks in the temple have jumped out of the wall. There are many knowledge in every Chinese tradition meal which shows the great Chinese traditional culture.

  With the continuous development of food culture, the content of dishes is constantly changing. In contrast, western-style food dishes are much simpler. Fried chicken, Hot Wing, French fries, hamburgers, seafood soup, almost no one is not to add to the name of cooking materials. There are some Western restaurants often appear in dishes such as pasta, Italy pizza, etc. In Chinese view maybe it seems to have no "flavor" in which a quality suggestive of poetry or painting, but it meets the Western fast-paced work and life, these easy and boring names help to eliminate unnecessary thinking time and simplify the process of eating and drinking.

  Today, the eastern and Western diet has become a common feature of everyday life. The differences between Chinese and Western cultures have created the differences between Chinese and Western food culture, while the differences between Chinese and Western food culture come from different ways of thinking and philosophy. Our Chinese food is now praised and recognized around the world and we gradually accept the food cultures in western countries. The exchange of food culture exists in our daily life, and always acts as a bridge which make combination with China and the West.

  The collision and communication between Chinese and Western food culture have promoted the progress and development of mankind and made great contributions to human civilization. The food culture, it has become a growing cultural influence, playing a much larger role than any other single force of globalization, and quietly changing the world.

i would agree.
much chinese food is either too salty, too oily or has too spicy, so you can't taste anything. There is also far too much MSG used in Chinese cooking.
All of these things are incredibly unhealthy. especially in the amounts served in many Chinese dishes.

The author of this blog lumps over 150 countries, each with their own individual  dishes, into one homogeneous country called 'the west'
Equally the author uses fast food as an example of 'western food' whereas the reality could not be further from this narrow perception.

Even taking one country as an example, Italy.
The food of the different regions is distinctive and can have very subtle flavours, food that is not swamped by poor raw ingredients, as many vegetables and meats in China can be toxic due to the pesticides and antibiotics that farmers pump into them. Pesticides and antibiotics that would be illegal in many non-Chinese countries.

Equally there is remarkable ignorance in what constitutes breakfast or lunch in countries outside of China.

American food is hardly an indication of the wide variety of food outside of china.
I suggest next time you don't lump the rest of the world together as 'the west', or rely on movies as a source of information.
Equally fast food from McDonalds or KFC is not 'western cooking'

It makes you seem ill-informed.

It would be like me saying 'all Chinese know Kung fu' based on a couple of Jackie Chan movies.
